Basic Buttery Biscuit Dough – Recipe

Here’s my faithful and trusted buttery biscuit dough.  I always substitute a little of the butter for Clover butter which makes it really buttery.

  • Butter 250g (200g butter and 50g Clover)
  • Caster Sugar 140g
  • Plain Flour 300g
  • Vanilla Essence 2tsp
  • 1 Egg Yolk

Soften the butter with a wooden spoon and then mix in the caster sugar followed by the egg yolk and vanilla essence.  Sift in the flour and bring to a dough.  Always chill in the fridge for 1 hour.  This makes is much easier to handle and allows the biscuit creations to hold their shape better when cooked.

  1. Is this a good recipe to use with cutters? Do the biscuits hold their shape well when cooked or do they spread?? I’m always on the look out for ones that are good with cutters.
