Here’s my faithful and trusted buttery biscuit dough. I always substitute a little of the butter for Clover butter which makes it really buttery.
- Butter 250g (200g butter and 50g Clover)
- Caster Sugar 140g
- Plain Flour 300g
- Vanilla Essence 2tsp
- 1 Egg Yolk
Soften the butter with a wooden spoon and then mix in the caster sugar followed by the egg yolk and vanilla essence. Sift in the flour and bring to a dough. Always chill in the fridge for 1 hour. This makes is much easier to handle and allows the biscuit creations to hold their shape better when cooked.
