This was Monday’s night meal. If you read my post ‘Weekly menu of a working family – week 5‘ you’ll know that this was meant to be Salmon, salad and new potatoes but as you can quite clearly see – there are no potatoes!
Basically I completely forgot to do them and so it very quickly turned into a very healthy salmon salad. I haven’t really had many salads yet this year and so it was a welcomed fresh and clean meal. I just love rocket leaves and so packed loads into this salad. I always make my own dressings as I’m not a fan of bottled ones and I find a little bit of extra virgin olive oil and balsamic is so much tastier. On this salad we had olive oil mixed with balsamic vinegar, garlic, pepper and salt.
