What’s on my family menu this week.
Saturday – Jacket potatoes with cheese and baked beans – I know this is not gourmet food but wow you can’t beat comfort food. I just love crispy jacket potatoes – we usually cook ours in the oven for around 2 – 2.5 hours as we like the potato light and fluffy and a crispy coating. But on Saturday we didn’t have enough time, so I cooked them on metal skewers and rubbed the skins with a little olive oil and salt – they only need an hour and they were light, fluffy and crispy in less that half the cooking – what’s more the electricity bill should be better if we continue to cook them this way. Bring on the skewers.
Sunday – Lasagne with fresh steamed vegetables – its always the way! since before last week we hadn’t had my home-made family recipe for lasagne for ages and once you had you kinda have to have it again very quickly, so with these than a week between we had lasange again. It’s my husbands favorite (he says I make the best ever – not that he’s biased)! It never disappoints.
Monday – Spicy sausage casserole with cannellini beans
Tuesday – Slow cooked beef bourguignon*
Wednesday – Chilli con carne*
Thursday – Potato, apple and bacon hotpot* recipe is from the Hamlyn All Colour Cookbooks 200 Slow Cooker Recipes – as you know I just love this book and it has so many wonderful and easy and different family recipe.
Friday – Chorizo pasta – always a good, quick and easy meal before we sit down for film night.
Will post you some pics throughout the week. Haven’t tried the beef bourguignon before so fingers crossed.
