These are lovely – if I may say so myself.
We loves these and make them in petit four cases instead of the larger cupcake cases, making them a nice little treat, we also added a little icing and sprinkles!
Recipe: Makes approximately 20 petit four size cakes.
2oz Self Raising Flour, 2oz melted butter, 2oz caster sugar, 1 egg, 2 drops vanilla essence (optional), 1oz icing sugar, Sprinkles
Pre-heat oven 180 (fan assisted) Beat the sugar and egg together (and vanilla essence if using), sift in the flour and mix together, then stir in the melted butter and divide between the cases. Bake in the middle of the over for 8 minutes.
Allow to cool.
For the icing: mixed icing sugar with approx 1 tablespoon of warm water. Put some sprinkles in a small bowl. Dip the cakes into the icing and then into the sprinkles and allow to set.
